Sounds like a weird combo right, eggs and peperoni? THEY WERE SO GOOD!
Ingredients:
tortillas
shredded cheese (we used mozzarella and cheddar)
peperoni
eggs
butter
ranch (optional)
Hubby cooked them on a large flat grill, but a large skillet might work as well.
Butter both sides of the tortillas and lay them flat on the grill, flipping once, to brown both sides.
Scramble eggs while the tortillas are cooking (I believe he used one egg for each casadia).
After flipping the tortilla over (browned side is up) sprinkle with cheese and place peperoni (like its a pizza). Once cheese is melted and opposite side is brown place scrambled eggs on one half, then fold other half over to create the casadia!
Cut and eat! We dipped them in ranch and they were YUMMY!!!
Apparently Hubby and his buddy (whom he shared a kitchen with on deployment) bought a flat grill and created this recipe together!
I was questioned Hubby as to why he had not made these for me sooner, hes been holding out on me, LOL.

In my house, quesadillas are for using up leftovers. Chop whatever you've got and throw them in. Amazing!
